The concept of the rainbow diet has been around for quite some time. In 1986, Dr Gabriel Cousens released his book titled ”Spiritual Eating And The Rainbow Diet”, followed in 2003 by “Rainbow Green Live-Food Cuisine”. There have been many other books in a similar vein in between and since then too.

Adding many colorful fruits and vegetables to your diet, can be an excellent way to receive a wide variety of nutrients.

It is well known that the deeper the color of the fruit or vegetable, the more nutritional value it holds. As an example, baby spinach, which is a darker green than an iceberg lettuce, has a much higher nutritional value.

A rainbow diet is also full of antioxidants. Red foods such as tomatoes and watermelon contain lycopenes, purple foods like dark grapes and plums contain flavinoids. Lutein is found in orange and yellow colored foods such as a lot of the citrus fruits, peaches and pawpaw.

Green foods such as broccoli and brussels sprouts are rich in folic acid, also known as vitamin B9, an essential vitamin for many bodily functions.

Allicin which contains important antibacterial properties is found in white foods, such as garlic and onions.

So by consuming a rainbow colored diet of fruits and vegetables, you really are doing yourself a favor by feeding your body a great variety of vitamins, minerals and antioxidants.
